Curds for every season

Summer and autumn types are quickest; hardy winter and spring varieties stand the cold to crop in the lean months. Romanesco adds lime-green spirals, and there are vivid purple and orange curds too — all close cousins of the leafy brassicas and broccoli.

Growing cauliflower from seed

Cauliflower likes rich, firm, limed soil and, above all, no check to growth — steady water and feeding give the best curds. Sow in modules, transplant carefully, net against pests (see our pest control guide), and shade summer curds from strong sun to keep them white.
