Dill seeds — feathery leaves and aromatic seed

Dill is a fast, feathery annual herb beloved for fish, pickles and potato dishes — both the soft leaves and the aromatic seeds are used in the kitchen. The species is gathered under Anethum graveolens within our culinary herb range. New to herbs? Our herb growing guide covers the basics.

Dill is quick from a direct sowing — the herb calendar shows when.

Leaf and seed from one plant

Picked young, the ferny foliage is the “dill weed” of the kitchen; left to flower, the plant sets the warm, caraway-like seed used in pickling. Its flat flower heads are excellent for hoverflies and other beneficial insects, so dill sits among our annual and aromatic herbs.

Growing dill from seed

Sow direct, as dill dislikes being transplanted and runs to seed if checked. For leaf, sow little and often in a sunny, sheltered spot; for seed, let plants flower and ripen in summer. Keep it away from fennel, with which it can cross.

Frequently Asked Questions

Do I grow dill for leaf or seed?
Both — pick the ferny leaves young, or let the plant flower and ripen its aromatic seed.

How do I sow it?
Direct where it is to grow — dill dislikes transplanting. Sow little and often for leaf.

Why does mine bolt so fast?
Heat and any check to growth make it run to seed — keep it cool and unchecked for leaf.

Can I grow it next to fennel?
Better not — dill and fennel can cross-pollinate.

Is it good for wildlife?
Yes — the flat flower heads are excellent for hoverflies and other beneficial insects.
